From Our Chef... Ceviche

4 oz Halibut
4 oz Salmon, fresh

Citrus Sauce
2 oz Apple cider vinegar
2 oz Rice wine vinegar
4 oz Fresh squeezed orange juice
2 oz Fresh lemon juice
1 tsp Cilantro, chopped
1 tsp. Capers, chopped

Instructions:
– Finely slice the salmon and halibut into bite-sized pieces
– Combine fish with citrus sauce in a medium mixing bowl
– Let mixture marinate for 30 minutes
– Garnish with greens and serve chilled
